The purpose of this release is to focus on a wine’s “sense of place”, which is known in the wine industry as the concept of “terroir”. This concept can be defined as the encompassing environment, including soil, climate, and topography which are key components in determining the final taste of the wine.
100% Cabernet Sauvignon sourced from vines planted in 1998 at the Dell Valley Vineyard in Hudspeth county in far West Texas. The wine has an inky, almost opaque purple color. Aromas of plum, currant and black pepper, with toasted coconut coming out with time in the glass. The palate is rich, tannic, and extracted. This wine begs for bottle aging in the 5-10 year range, or a decanting with aeration to begin to show itself.
